Yes, I know there are stereotypes that dads don’t know how to cook or when we do cook things will end up looking like they do in the photo, and while it may be true for some of us, it doesn’t have to be true for any of us. Today, I’m going to show you that single dads can cook too!

The trick to cooking is starting out slow and to experimenting.  When you find recipes you and your family like then save them, so you can create your own personal single dad cookbook. Today, I will also give you your first recipe for your cookbook!   My favorite way to save my recipes is on my computer with folders for the type of meal: appetizers, main dish, sides, desserts, etc.  Now, I learned my first few dishes from my mom when I was in high school. Today, though there are thousands of websites you can use to find recipes that suit your taste.  Now, I’m not a Chef or a formally trained cook, but I’m confident in the kitchen, which is half the battle and I even have a few “go-to” dishes that I can put together if need be.

Now just like any parent, the most valuable resource for a single dad is time.  One of my favorite kitchen tools is the crockpot.  There’s nothing better than coming home at the end of the day and smelling what you prepared before work and having it ready to eat! Most of these recipes can take less than 30 minutes of prep before you turn on the crockpot.  My favorite recipe is Crockpot Pulled Pork.  I use a tried and true recipe which is really easy and found on many websites, but  I’ve updated it to have a little extra kick and if you like food with some extra spice give it a try, otherwise you can make it the conventional way.  The extra spices are listed as optional  in the recipe below:

Crockpot Pulled Pork Recipe
Ingredients:
  • 1 pork tenderloin (approx. 2-3 pounds)
  • 1 medium onion chopped
  • 1  12 oz can if coca cola
  • 12 oz of your favorite BBQ sauce ( I use Sweet Baby Ray’s)
  • 1 teaspoon cayenne pepper (optional)
  • 1 teaspoon cumin (optional)
  • 1 teaspoon oregano (optional)
  • 1/2 teaspoon salt(optional)
Directions:
  1. Chop the onion and place in the bottom of the crockpot
  2. Unwrap tenderloin and place in the bottom of a 5-quart crockpot
  3. Pour can of coke and 12 oz of BBQ sauce over top and cover.  Cook on low for 8-10 hours.
  4. 1 hour prior to serving take tenderloin out of the crock pot and place on a separate plate or cutting board and shred into small bite size pieces with 2 forks. Once fully shredded put the pork into the crockpot and continue cooking for the remaining hour.
  5. Enjoy your pulled pork on the bread of your choice.

This meal is easy enough to pull out at anytime and it’s really good enough that you could serve to company for a casual or party like a  Super Bowl party.  Good luck and happy cooking!
